Thumbprint Cookie Recipe
These thumbprint cookies have a subtle sweetness that goes well with any jam, jelly or fruit spread. They’re also a hit with kids who love to help make them.
Thumbprint Cookies
These cookies are subtly sweet and you can use whatever jam/preserve you prefer.
Ingredients
- 3/4 Cup Butter
- 2/3 Cup Sugar
- 1 egg
- 2 tsp vanilla extract
- 2 Cups All-Purpose Flour
- 1/2 tsp baking powder
- Jam, preserves or spread of your choice
Instructions
- Preheat oven to 350 degrees F
- Cream the butter and sugar in the bowl of a stand mixer until fluffy. About one minute.
- Add egg and vanilla, blend until mixed well.
- Add in flour and baking powder. Allow to mix for about 5 minutes. Scrape sides after a couple of minutes to allow even mixing.
- Cookie dough will lighten in color.
- Roll cookie dough into balls
- Press thumb into the middle of the cookie dough.
- Fill each cookie with about 1/2 teaspoon of chosen Jam, Jelly or Spread.
- Bake for 13 minutes. Cookies will be pale in color not golden brown. Allow the cookies to cool. Filling will be hot.
